As part of the research project, the biosynthesis of 3-alkyl-2-methoxypyrazines will be investigated by labeling experiments and chemical analysis. The elucidation of the reaction sequence that leads to the incorporation of L-serine as a building block of the pyrazine heterocycle and the identification of corresponding intermediates are at the center of the planned experiments. A further aim is the identification of previously unknown 3-alkyl-2-hydroxypyrazine derivatives such as corresponding glycosides and their translocation within plants. The project is intended to provide the scientific basis for future studies on the biochemical and molecular biological elucidation of the formation of aroma-relevant natural pyrazines in plants.
