The central goal of this project is to introduce new concepts for the analysis and characterisation of far-from-equilibrium dynamics of quantum fields, using large-scale analog quantum simulators with ultracold atoms. We investigate the emergent dynamical degrees of freedom and effective symmetry properties by studying the response of the nonequilibrium system to perturbations, which encodes also its stability properties. We will employ the equal-time formulation of quantum field theory to define and extract nonequilibrium thermodynamic quantities, such as time-evolving thermodynamic potentials and scale-dependent entropies, from data of quantum simulators.
